Ingredients

250g butter
250g sugar
3 eggs
2 lemons (rind and juice)
vanilla essence
250g almond meal
150g polenta
1 teaspoon cream of tartar
teaspoon carb soda

Method

Preheat oven to 170C.

Beat butter, sugar and grated lemon rind until light and fluffy. Add eggs, beating well after each addition. Add lemon juice, vanilla, almond meal, polenta, cream of tartar and carb soda, mix well.

Pour batter into a greased 23cm spring form tin, tapping gently to make sure there are no air bubbles.

Bake for 1 hour. Cover with baking paper, reduce heat to 160C and bake for another 40 minutes. Allow to cool in tin.
