Cornbread

Ingredients

1 cup polenta
1 cup 85% light flour
1 teaspoon baking powder
teaspoon salt
2 tablespoons sugar
60g butter
1 egg
250ml milk

Method

Sift all dry ingredients into a bowl. Whisk milk and egg together, melt butter and add to egg/milk mixture, mix well. Gradually add to dry ingredients, mix well. It should be a moist mixture which falls easily from spoon.

Put into a well-greased cake 20x20cm tin. Bake in a moderate oven for 25 minutes.

Cornbread is nicest eaten warm. Serve it plain or buttered for a change with a salad. Unlike bread, cornbread is meant to be a little sweet.
