Ingredients

2 cups hulled millet
1 medium cauliflower
4 cups water
salt & pepper to taste

Method

Toast millet in a skillet over medium heat, stirring constantly, until it begins to turn golden, pop and becomes aromatic.

Add millet to a large saucepan. Add water, broken up cauliflower, salt and pepper. Bring to a boil, cover and simmer for 45 minutes.

When done, mash if desired.

Otherwise known as Mock Mashed Potatoes.
