Millet
Millet Flat Bread

Ingredients

2 cups millet flour
cup wholewheat flour
1 cup buttermilk
teaspoon cumin seed powder
teaspoon turmeric powder
2 tablespoons sesame seeds
teaspoon chilli powder
salt & pepper
1 teaspoon baking soda
cup onions; finely chopped
2 cloves garlic; crushed
3-4 tablespoons oil

Method

Mix the millet and wholemeal flours with the buttermilk so that it becomes a batter. (Water can be used instead of buttermilk) Let the batter stand for about 2 hours.

Add spices and vegetables. On a medium heat warm pan and make the cakes like pancakes. Cook approx 3 minutes each side then place on cooling rack.

Serve with chutney, yoghurt, eaten plain and lightly spiced with salt and roasted cumin seed powder.

Variation: green peas, carrots, spinach also go well with this recipe.
