High Fibre Apple Slice

Ingredients

2 cups wholemeal SR flour
cup rolled oats
cup wheat bran
200g butter
1 cup brown sugar
2 eggs
3-4 cooking apples
cinnamon
milk

Method

Preheat oven to 180C.

Cream the butter and sugar together. Add the eggs gradually, continuing to beat. Mix in the flour, oats and wheat bran.

Press half the mixture into a sponge roll or lamington tin. Peel and chop the apples, place on the pastry base and sprinkle with cinnamon.

To the remaining mixture, add sufficient milk to bring it to a spreading consistency. Spread over the apple, sprinkle with more cinnamon or sugar.

Bake for 30 minutes or until golden brown. Slice and serve hot.
