Blueberry Oat Bran Scones

Ingredients

1 cups oat bran
1 cups 85% light flour
1/3 cup brown sugar
2 teaspoons baking powder
1 teaspoon cream of tartar
cup butter
2 eggs
1/3 cup plain yoghurt
1 teaspoon vanilla essence
1 cups blueberries

Method

Preheat oven to 190C.

In a large bowl mix the bran, light flour, baking powder, cream of tartar and sugar together. Cut in the butter. In a separate bowl, mix the eggs, yoghurt and vanilla essence. Blend into the dry ingredients. Fold in the blueberries carefully.

Roll our dough and cut with a scone cutter, place on greased tray. Bake for 20-25 minutes.

Yoghurt may be substituted with milk or cream
