Ingredients

cup cracked wheat
1 teaspoon salt
1 cups tomatoes; chopped
1/3 cup olive oil
cup shallots; finely chopped
1/3 cup lemon juice
1 cups parsley; chopped
2 tablespoons fresh mint; chopped

Method

Soak cracked wheat in lukewarm water for 1 hour. Drain and spread on paper towel to dry. Combine cracked wheat with tomatoes, shallots, parsley and salt. Whisk together oil, lemon juice and mint and combine the two mixtures. Refrigerate until well chilled and serve.

Serves 4.

A very popular dish from the Middle East. The cracked wheat gives a delicious nutty flavour and the dish is excellent served with pita bread.
