Ingredients

1 cups 100% wholewheat flour
1 cups superfine flour
1 teaspoons carb soda
125g butter; cubed
1 cups sultanas
cup raisins
cup currants
cup castor sugar
2 teaspoons cinnamon
1 teaspoon mixed spice
2 cups buttermilk
1 egg; beaten
1 teaspoon vanilla

Method

Preheat oven to 180C.

Rub butter into flours and carb soda. Add fruits, sugar, and spices. Add buttermilk, egg and vanilla. Pour into loaf tin, smooth the top.

Cook for 1 hour.
