Pumpkin Muffins

Ingredients

cup oat bran
cup sugar
2 eggs
1 cup pumpkin puree
2 cups wholemeal SR flour
cinnamon & sugar for sprinkling

Method

Puree: cook 300g of pumpkin in cup of water, then vitamise.

Preheat oven to 200C.

Grease muffin pans. Combine oat bran, sugar, eggs and pumpkin puree. Fold the flour, stir until combined. Spoon the mixture into prepared pan. Sprinkle with cinnamon and sugar and bake 20-25 minutes.

When cooked, remove from tray and cool on wire rack.

Makes 10-12 muffins.
